On this occasion we will tell you about a dish that cannot be missed on family Sundays, much less at the Mercado Revolución: the exquisite Barbecue de lamb, which has become a culinary tradition in Zacatlán, since it has been prepared for more than 70 years. and is sold in our unique market.


This dish is a portion of juicy and soft lamb meat, which is previously seasoned and baked in holes (holes in the ground) with embers. The peculiar thing about the dish is that the lamb meat is covered with maguey leaves (a secret now revealed), which experts and those of us who love barbecue say, gives it that unique and special flavor that characterizes it.


The main sales days in Zacatlán are Friday and Sunday, although some vendors do it all week, due to culinary tradition and thus delight those who like a good barbacoa taco.


In addition to the juicy lamb barbacoa, other dishes are derived that are a delight and well known in Zacatlán, such as consommé, a seasoned broth accompanied by cooked chickpeas; tripe, a mole, either green or red, prepared with lamb belly made in green mole, has lettuce, cumin, garlic, spinach, chili peppers, onion and tomato.


And finally, the traditional Zacateco mixiote, a piece of juicy meat enchilated in guajillo mole, wrapped in a sheet of paper extracted from the maguey stalk, which gives off its aroma when cooked in a pit or in a drum.
